Joel Therien had a thriving career as a personal trainer and he started his second professional career right out of University as a Pulmonary and Cardiac Rehabilitation Specialist at the Montford Hospital in Ottawa, Ontario, Canada.


However, at 27 years of age he started to lose his health and became a “medical mystery”, as he referred to his health problem. He had been misdiagnosed with either Lou Gehrig’s disease, multiple sclerosis, or brain cancer. He went from a lean muscular 240 pounds with 7% body fat down to 165 pounds. As a bodybuilder, this deeply concerned him and this is when he turned to the internet to look for answers.

BOK CHOY AND GINGER STIR FRY RECIPE

1 tbsp. coconut oil

2 cloves garlic, chopped

1 tsp. grated ginger

1 tbsp. low sodium soy sauce

1 lb. bok choy

toasted sesame seeds

salt and pepper to taste


Wash the bok choy user cold water and chop it up, separating the stems from the leaves.


Heat olive oil in a large non stick sauce pan and toss in the garlic and ginger. Cook for just a about a minute or until fragrant. Add bok choy stems, soy sauce and a splash of water and cook for 5 minutes.


Once the stems are becoming tender, toss in the bok choy leaves and cook until they have wilted down.


Season with salt and pepper and finish with a sprinkle of toasted sesame seeds. Enjoy!


Nutrients for 1/2 of recipe: Calories: 97; Total Fat: 9,3g; Saturated Fat: 6.3g; Cholesterol: 0mg; Carbohydrate: 2.9g; Dietary Fiber: 1.2g; Sugars: 0.6g; Protein: 2g


CRUNCHY BOK CHOY SALAD RECIPE

3 baby bok choy, halved and thinly sliced (5 cups)

3 scallions, thinly sliced

1/4 cup sliced almonds

1/4 cup sunflower seeds

1 tbsp. extra virgin olive oil

1 tbsp. toasted sesame oil

1 tbsp. honey

1 tbsp. low sodium soy sauce

1 tbsp. red wine vinegar


Combine bok choy, scallions, almonds, and sunflower seeds in a large bowl. Set aside.


In a small bowl combine extra virgin olive oil, sesame oil, honey, soy sauce and red wine vinegar. Whisk together.


Drizzle the dressing over the salad, toss and enjoy!


Serves 2-4 Calories: 369; Total Fat: 30.9g; Saturated Fat: 3.5g; Cholesterol: 0mg; Carbohydrate: 20.6g; Dietary Fiber: 6.1g; Sugars: 12.1g; Protein: 10.6g


15 MINUTE BOK CHOY SOUP RECIPE

1 tbsp extra virgin olive oil

1 lb. baby bok choy (about 3 bulbs)

4 cloves garlic, thinly sliced

1/2 tsp. dried turmeric

3 cups cold water

squish of fresh lemon juice

salt and pepper to taste


Separate the bok choy leaves from the stems and slice.


Heat oil in a medium pot over a medium-high heat. Once the oil is hot, add in the garlic and turmeric, stir and cook for just a couple of minutes or until the garlic is fragrant.


Add in the bok choy stems and season with salt and pepper. Once the stems begin to soften, stir in the leaves and the water. Turn up the heat and bring everything to a boil.


Once boiling, the soup is done. Shut off the heat and finish the soup with a big squish of fresh lemon juice. Serve and enjoy.

3 Healthy GRILLED CHEESE SANDWICH Recipes | Adult and Kid Approved with High Fiber LOW CARB Bread

From it’s humble beginnings in the 1920’s to it’s now world renowned fame as a sandwich the Grilled Cheese has undergone many changes over the years. Abbey brings you 3 unique recipes to turn your grilled cheese into a masterpiece using quality ingredients and flatbread. These grilled cheese sandwiches are not only a treat for parents they are also kid approved.


Abbey has always been a huge fan of the grilled cheese sandwich, going so far as to claim that if she was a parent she would actually burn dinner on purpose just so she could make grilled cheese sandwiches for her kids. While that remains to be seen there is no doubting her dedication to the art of making a proper, delicious, well balanced grilled cheese sandwich that anyone would want to eat. Abbey knows the key to getting that really good flavor out of your grilled cheese sandwich is to use fresh, high quality ingredients. She has partnered up with Flatout Flatbreads for this video to show you that flatbread is a great alternative to other breads that could be used for a grilled cheese sandwich. They are not only higher in fiber but protein as well.


Abbey’s first recipe is her Fig and Greek grilled cheese. To make this grilled cheese sandwich start by melting some butter and keeping it on stand-by. Lay out your flatbread and using a cooking brush coat your bread evenly with the melted butter. Using a brush is a much better way to go that just slathering butter on with a knife. The brush allows you get a nice even distribution of butter and ultimately uses less butter while still getting you that golden brown texture when cooked. Once you’ve got your bread coated flip it over as seen in the video and add some creamy brie cheese to it. Follow that up with some ripe figs, arugula, walnuts, and just a little drizzle of honey. Fold it over and pan fry it just like you would any other grilled cheese sandwich.


Her second recipe is for a Brussels Sprouts Pear Grilled Cheese. I know we specifically said kid approved and historically children do not care for Brussels sprouts, they do however like pears. The pear flavor, in combination with the cheese provides an even, tasty balance so good that most kids won’t even notice the Brussels sprouts. Start this grilled cheese recipe off by shredding some Brussels sprouts into a bowl and add a bit of grainy mustard to that stirring it all together well. Repeat the buttering process with this flatbread as well, flip it over and add a fair amount of Havarti cheese to one side. Top your Havarti with some fresh pear, your Brussels sprout slaw, and finally add some pomegranate to the top. Fold this over and grill it up.


Abbey’s final grilled cheese sandwich recipe has a bit of Italian flair to it featuring pesto, artichokes, and Swiss cheese. Repeat the buttering process with this flatbread as well, just like you have with the last two. Now flip your flatbread over and add a generous amount of Swiss cheese to one side. On top of your Swiss cheese add artichoke hearts, as many as you see fit, some ripe tomatoes, a bit of pesto, and finally some fresh basil leaves. Fold this one over as well and grill it to perfection.


There you have it, 3 delicious, easy grilled cheese recipes that anyone could appreciate.

Today I’m sharing a few healthy breakfast recipes that are perfect to make for a brunch feast with you and your family and friends for a delicious sunday morning routine. I’m making crispy oven bacon, perfect scrambled eggs, gluten free fluffy pancakes, fruit salad and roasted cherry tomatoes.


CRISPY OVEN BACON

Lay out bacon strips on a parchment lined cookie sheet and bake in the oven preheated at 375F for 20 min, flipping half way.


ROASTED CHERRY TOMATOES

Heat up a large pan on medium heat with 1 tbsp of olive oil and toss in about 3 cups of cherry tomatoes. Season with a punch of chunky sea salt and black pepper and roast for 5-10 min while tossing.


PERFECT SCRAMBLED EGGS

In a large bowl mix together a dozen eggs with 1 cup unsweetened almond or soy milk and season with sea salt, black pepper and freshly chopped chives.

Heat up a large non stick pan on medium heat with 1/2 tbsp of grass fed butter, ghee or coconut oil.

Pour egg mixture into the pan to cook for 4-6 min until fluffy while scrapping the bottom and sides with a spatula to keep them fluffy and cook evenly on all sides.


FRUIT SALAD

In a medium sized bowl mix together 2 cups papaya chopped, 1 cup raspberries and 2 bananas.

Pesto Chicken Wrap

1 cup chicken, cooked and shredded

¼ cup goat cheese OR cream cheese, room temperature

2 tbsp pesto sauce (Recipe Below)

lettuce

tomato slices


In a small bowl combine chicken, goat cheese and pesto sauce.

Mix well with a fork.

On a large tortilla layer tomato, lettuce and pesto chicken mixture.

Wrap and enjoy!


Basil Pesto Sauce http://bit.ly/1Ut9ZtN

2 cups fresh basil leaves

2 cloves garlic, minced

¼ cup pine nuts

½ cup olive oil

¼ cup parmesan cheese, freshly grated

salt and pepper


In the bowl of a food processor combine basil. garlic and pine nuts and pulse for 30 seconds.

Add olive oil slowly while the blade is still running until you reach the desired consistency.

Season with parmesan, salt and pepper.

Refrigerate for up to a week.

Enjoy!


Steak Wrap

2 tbsp mayonnaise

1 tsp prepared horseradish

3-4 oz steak, thinly sliced OR sliced roast beef

½ cup arugula

½ red bell pepper, cut into strips


In a small bowl combine mayonnaise and horseradish.

On a large tortilla layer horseradish mayo, arugula, red pepper and

beef.

Wrap and enjoy!


Avocado & Egg Salad Wrap

3 eggs, boiled, peeled and chopped

2 tbsp Greek yogurt

½ lemon, juiced

¼ cup celery, finely diced

¼ cup green onion, finely diced

salt and pepper

tomato slices

avocado slices


In a medium bowl mix eggs, green onion, celery, yogurt, lemon juice, salt and pepper.

On a large tortilla layer tomato, avocado and egg mixture.

Wrap and enjoy!

Eating a nutritious breakfast will help kick start your metabolism, boost your energy level, and improve your productivity throughout the day. This overnight oats breakfast is a great source of Potassium, Vitamin A, Calcium, Magnesium and almost the entire daily value of Iron. According to studies, eating oatmeal on daily basis can reduce your blood pressure by several points. One cup of oats has 16% of daily value of fibre, which is a very substantial amount of fibre per meal.

There’s only one major problem with breakfast. Most people are in such a rush in the mornings and don’t have time to make a healthy meal. So that’s where overnight oats come in handy!

To prepare overnight oat breakfast all you need is:


1/3 cup organic oats

1 tbsp chia seeds- chia seeds are loaded with antioxidants and great for weight loss.

¼ – ½ cup coconut milk (almond milk, soy milk, rice milk) any choose of milk

¼ cup Greek yogurt

¼ tsp cinnamon – cinnamon contains Anti-inflammatory Properties and also a great source of antioxidant.

1 tbsp Honey (optional) contains Anti-bacterial and anti-fungal. Helps regulate blood sugar

Blueberries

Banana

Strawberry


Place all your ingredients in a jar or bowl and cover, put it in the fridge overnight. In the morning take out from the fridge, give it a stir, and enjoy… you can either eat it cold or heat it up and it just ready to go for you.

This delicious breakfast can fill you up in the morning and absolutely delivers the essential nutrients and minerals your body needs every day. This will help you lose weight by preventing hunger and making you feel full during the day.
