Mexican Salad, can be a sumptuous meal in itself or a delectable accompaniment to your dinner. Food blogger Tarika Singh brings you a hearty and filling Mexican Salad recipe.
Ingredients:
For Dressing:
2 tbsp extra virgin olive oil
fresh coriander leaves – roughly chopped
3 cloves of garlic – finely minced
2 tsp dried oregano
3 tbsp lemon juice
3/4th tsp cumin powder
1/4 tsp chilli flakes
For Salad:
200 gms lettuce
tomatoes – chopped
corn
1/2 cup kidney beans – boiled
1 avocado
spring onion
Method:
To make the dressing:
– In a small glass, add the extra virgin olive oil, fresh coriander leaves, minced garlic, dried oregano, lemon juice, cumin powder and chilli flakes and whisk all the ingredients well.
To make the salad:
– Roughly chop the lettuce into bite-sized pieces.
– In a bowl, add the lettuce, chopped tomatoes, corn, boiled kidney beans, avocado, spring onion and little dressing and toss the ingredients.
– Keep adding the dressing as you toss the salad through.
– The delicious Mexican Salad is ready to be served.

1 tsp cumin
1 tsp tumeric
1/2 tbsp curry power
Rice Bean Burrito Filling
1 garlic close

1/2 c corn
1/4 c salsa
nutritional yeast – 3 tbsp
1.5 tsp each of cumin, paprika, oregeno
tortillas and cilantro
Veg Noodle Soup
1/2 c onions
2.5 c frozen veg
2 stlaks celery

1.5 c noodles
1 med potato

HOW TO STORE THESE
If you are going to eat more than one a day, all can stay in the fridge.
If you are ONLY eating one a day with your other meals, you have 2 options.
1. Cut the recipe in half, or
2. Put some meals in the freezer. Take one out the night before and keep in the fridge to thaw. Store the yogurt sauce in the fridge and add on after you’ve reheated. Reheat in a covered saute pan. Or eat cold 🙂
If you will eat cold, you can add the yogurt topping into each container. If you are going to freeze meals or reheat them out of the fridge, set the yogurt topping aside in the fridge and add on once it’s been reheated!

The best way to get the most out of your vegetables is to enjoy them a variety of ways — raw, steamed, boiled, baked and grilled. If you eat a variety of fruits and vegetables on a regular basis, you don’t have to worry about the cooking method.

[ OPEN FOR RECIPES ] Here are 3 easy and healthy recipes you can make to get you into the holiday spirit! We’re making gingerbread bliss balls, a red and green smoothie, and some cranberry orange bread – yum!
[ VERY MERRY SMOOTHIE ]
// Red Layer:
½ cup Arctic Select frozen cranberries
1 frozen banana
½ – 3/4 cup fresh squeezed orange juice
// Green Layer:
1 ½ frozen bananas
½ – 3/4 cup fresh squeezed orange juice
1 tbsp greens powder (or one large handful of fresh spinach)*
Optional topping: starfruit segment for glass

1. Add the frozen cranberries to a blender or high speed food processor and blitz.
2. Add the remaining ingredients for the red layer, blend well, and set aside.
3. Rise your food processor/blender, then add all of the ingredients for the green layer and blend
4. Layer the red and green layers ** into a glass cup using a small spatula
5. Enjoy!
*If you are using fresh spinach instead of a greens powder, blend the spinach and OJ together first before you add the frozen banana – this will make the color more smooth and less clumpy
** If you aren’t taking a photo for instagram (lol), you could just blend the red layer and the green layer together and make a monotone smoothie…but it may look kind of brown haha
[ GINGERBREAD BLISS BALLS ]
3/4 cup soaked dates*
1 tbsp molasses
1 tsp fresh grated ginger**
1/2 tsp nutmeg
1 tsp cinnamon
3/4 cup rolled oats
1/4 cup chopped almonds
—–
1. Unless you dates are super soft, pit them and soak in warm water for ~10 min. Drain
2. Combine the dates, molasses, and spices into a food processor and blend to make an even paste
3. Add the almonds and rolled oats and pulse until combined
4. Roll into balls (I used a tbsp) and store in the fridge for up to 1 week
*If you don’t have dates, you can really use any dried fruit you have on hand, but keep in mind this will alter the overall taste of the balls
**You can substitute this for ½ tsp of ground dry ginger if you do not have fresh
[ CRANBERRY ORANGE BREAD ]
1.5 cups oats, ground into flour
2 tbsp tapioca starch*
3 tbsp coconut sugar, or any sugar of choice
¼ tsp salt
1 tsp baking powder
1 flax egg (1 tbsp flax + 3 tbsp water)
⅓ cup unsweetened applesauce
¾ cup fresh squeezed orange juice**
1 tsp grated orange zest
½ tsp vanilla extract
1 tbsp apple cider vinegar
2 tbsp almond butter (or other neutral nut butter of choice)
½ cup fresh or frozen cranberries
Optional: Buckinis to sprinkle on top

1. Preheat oven to 375 F
2. In a small bowl, prepare your flax egg by mixing 1 tbsp flax with 3 tbsp water. Mix well and set aside.
3. In a medium bowl, add the oat flour, tapioca starch, baking powder, coconut sugar, and salt. Stir well.
4. In a large bowl, combine the applesauce, orange juice, orange zest, vanilla extract, ACV, and almond butter. Mix well.
5. Slowly add the dry ingredients to the wet ingredients and stir until no clumps of the dry mix remain
6. Fold in the frozen cranberries (you may want to set a few aside so you can top the bread with them)
7. Pour the batter into a greased or parchment paper-lined loaf pan. Top with optional cranberries and buckinis
8. Bake for 45-50 min, or until a toothpick comes cleanly out of the center
9. Let sit in pan for 10 min, then remove from parchment paper and place on a baking rack. Let cool.
10. Slice and enjoy! Or just eat the entire thing in one sitting like a loaf of bread…you do you 😉
*I have only made the recipe with the tapioca starch and cannot guarantee any substitutions
**You can use store-bought OJ if you must, but fresh will really make this taste so much better!

In today’s video, I’m showing you how to make three simple and delicious vegan winter drinks! We’re making a peppermint hot chocolate, a creamy vegan eggnog and a five spiced chai latte!
**HOT CHOCOLATE**
2 cups coconut milk
2 cups boiling water
3 tablespoons raw cacao powder
1 teaspoon vanilla powder
3/4 teaspoon Simply Organic® Peppermint Flavor

Morning Routine and DIY ! In this DIY I show my Morning Routine and 10 epic DIY projects to make your mornings happy and unique. Everyday makeup tutorial, Heatless curls hairstyle, DIY makeup, DIY clothes, healthy recipes, nail art and much more. I wanted to film a Morning routine for school or work, but summer is just around the corner, which means no school or work. So here I show my typical free day morning routine or a summer morning routine. Although summer hasn’t yet arrived to where I live to be honest. Anyway, this is a morning routine when I don’t have to get up and run out the door, but I can actually sleep a bit longer. Well as you can see in the video that’s not always the case, hehe.

This morning routine is probably different from all other morning routine videos because I also show you 10 amazing DIY ideas that make every morning the best morning ever! I have been trying to eat very healthy lately, so in this morning routine video I show you several easy healthy recipes. I made an easy and delicious smoothie with strawberries, raspberries, banana and some milk. This smoothie is so delicious and done in a second! Other healthy recipes that I show you throughout my morning routine are granola and seed crackers. Both are so easy to make, so tasty and convenient to have for a breakfast or a snack.
In the morning routine video I also show you some DIY makeup, specifically a DIY tinted lip balm and DIY beach hair spray. A DIY lip balm consists of only two ingredients that I bet you already have at home. Vaseline and a piece of old lipstick. This DIY lip balm makes my lips moist and soft while it also gives them a nice touch of color.
There can’t be a morning routine without fixing our hair, right? This time I decided for heatless waves that won’t even take a minute of your time. Because who wants to spend a hour on hairstyles ?! Not me hehe. And since this is a morning routine for summer my heatless waves aren’t perfect without that summer beachy texture. I show how to quickly make a DIY beach hair spray. Just a few ingredients and you have an awesome spray that gives instant texture and waves to your hairstyles.
In the morning routine I also show my workout routine as well. On rainy day I like to do a strength workout but since this weekend the weather was nice, I decided for a cardio workout and went out for a run.
Even though I don’t wear makeup everyday, I show you my makeup routine for when I do decide to put something on my face. So we can call it my everyday makeup, because whenever I wear makeup, this is the makeup look I go for. Just a very basic natural makeup, that enhances my facial features without making me look overly done.
When it comes to clothes, you guys know how I love my DIY projects. So I show how to make awesome DIY shoes and DIY graphic tee. Both so easy, fun to make and gorgeous to look at. For the DIY shoes I stick denim hearts all over my sneakers and they turned out fantastic. DIY graphic tee is made by simply ironing the picture on with the help of a transfer paper.
And of course I had to also include an easy and lovely nail art design to my morning routine. Purple nails with colorful dotted accents are an easy way to make a perfect summer nail art in no time.
As promised here are the measures I used to make my healthy crackers: one and a half cups of sunflower seeds, quarter of a cup of pumpkin seeds and pines, one cup whole flax seeds, half a cup grounded flax seeds, about five spoons of chia seeds, half a cup of sesame seeds, some almond slices, 5 spoons of psyllium husk and a tea spoon of salt. In the end add 5 decilitres of water.
